Brioza’s Chestnut Chips
Use a pot that is about 6 inches by about 2 inches tall. Pre-heat the oil to 300 degrees F. Slice the chestnuts on a mandoline to about 1/16” thickness. Fry a few slices in the oil, constantly moving them around with a slotted spoon until golden brown. Remove to paper towels and season with salt and pepper. Chef Stuart Brioza |
