Brioza's Basic Pasta Dough


  • 4 cups all purpose flour
  • 4 whole eggs
  • 3 egg yolks
  • 2 ounces olive oil
  • salt, as needed
  • warm water, as needed

Form a well with flour. Put whole eggs, yolks, oil and salt in center. Mix until stiff dough forms, adding warm water as needed. Knead dough until smooth, about 20 minutes. Wrap in plastic and allow to rest overnight in the walk-in.
