Kuepper’s Chestnut and Cranberry Pesto
- 1 each orange, juice and rind
- 1 tablespoon garlic
- 1 1/2 cups roasted chestnuts
- 1 1/2 cups basil
- 1 cup Parmesan cheese
- 1 cup olive oil
- 1 teaspoon salt
- 1/2 teaspoon white pepper
- 1 cup cranberries

1/2 cup water
- 1/2 cup sugar
Place everything except olive oil in a cusinart purée and stream in
olive oil. Preparation time: 45 minutes. Serves 16.
